Good Thursday morning to you too! I am going to be canning some spaghetti sauce today and maybe some salsa if there are enough ripe tomatoes! So, what have you been canning? This is my first year canning and I am learning as I go. Do you do the upside down for 10 minutes after you fill and put your freshly boiled lids on, water bath, or pressure cooker? I am doing the upside down method today. I am excited and nervous. Now I know that canning is not rocket science and that people have been doing it for many many years so why the fear? Any advice would be much appreciated. We have 18 tomato plants that are starting to ripen now so I need to gain some confidence on what to do with the beauties! Today I am using Mrs. Wage's mix. I want to do soup and salsa and spaghetti sauce my own way with veggies and all but don't really know how. : 0 ) Can't wait to see pictures of what you have put up. God bless, Jamie
