A great day for Pumpkin rolls

Wow, its windy here today!!

My Fall yard decor is blowing everywhere. Hopefully it doesn’t go farther than the neighbor’s yard.

This morning I got busy and cleaned the house. Everything is sparkling clean and shiny.

So then, I decided to bake something and I got to thinking; what would be better than pumpkin rolls?! :)

pumpkin-roll

3 eggs
2/3 cup canned pumpkin
1 cup sugar
3/4 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon

Mix all dry ingredients; add eggs and pumpkin..

Line a cookie sheet or 11x15" jelly roll pan with waxed paper. Spread batter evenly in the pan, leveling to edges.

Bake in a preheated 350°F oven for 15 minutes.

On a work surface, spread a clean cotton dish towel. Sprinkle liberally with confectioners sugar- you don’t want the roll to stick to your towel.. Invert the pumpkin roll onto the dish towel while still warm. Peel off the paper.

Gently roll up the towel, holding both ends to roll evenly. Allow to cool while still rolled up.

Unroll, spread with the filling below and reroll. Place in aluminum foil. Refrigerate.

Slice 1 1/2 to 2 inch thick slices for each serving.

Filling:

2 teaspoons butter
1 teaspoon vanilla
8 oz. pkg. cream cheese
1 cup confectioners' sugar

Mix and whip until creamy.

I made 3; one for us and the other two to share.

I got a fresh pot of coffee on if you want to come over. :)

  9. I love those things! At the bake sale at my son's football game the other day, they were charging $10 a piece for a whole one! I thought that was really high for a bake sale- and they all sold! My sister bought one when I wasn't looking and I told her now she knows what she's getting for the holidays- they really aren't that hard to make :) THanks for sharing the recipe you use- I'll copy it down and see if it's similar to mine :)
